Braised Short Ribs
Braised short ribs are a satisfying, slow-cooked comfort food. They are an incredibly tender, flavorful meat, and great paired with a tomato base sauce.
Ingredients
3 pasture-raised bone-in beef short ribs (about 4 pounds)
2 cups pasture-raised bone broth
2 tablespoons pasture-raised beef tallow
14 ounce organic crushed tomatoes
4 organic carrots
1 organic yellow onion
2 cloves organic garlic
2 organic bay leaves
Unrefined salt to taste
Directions
Preheat oven to 250°F.
Place a large dutch oven on the stovetop on medium-high heat.
Add tallow and sear all sides of the short ribs for 1 minute on each side.
Remove short ribs and set them aside.
Dice the onion and carrots.
Cook the onion, carrots, and salt in the dutch oven.
When they are cooked and soft, add bone broth and crushed tomatoes. Let this cook and reduce a bit.
Mince the garlic and add it with the bay leaves to the pot.
Now add back in the short ribs, pushing them under the sauce and supported by the vegetables to keep the top of the meat out.
Cover the dutch oven with the lid and place in the preheated oven for 6 hours, until the meat falls off the bone.
Remove the bay leaves and serve.
Notes
You can make crushed tomatoes with peeled, seeded, and crushed Roma tomatoes – or buy them made in a jar. Check the ingredients to make sure it is only organic tomatoes.
