Tallow or Lard

Rendered down animal fats are the most traditional and prized cooking fat. Animal fats contain fat-soluble vitamins A, D, E, and K. These fats have a high smoke point and are stable. Animal fats are also great for the skin, being similar to our own and non-comedogenic.

Ingredients

  • 2-3 pounds pasture-raised animal fat (any animal)

Directions

  1. Chop the fat as finely as you can.

  2. Add the fat to a large pot or crock pot on low heat.

  3. Cover the pot and allow the fat to melt for 3+ hours.

  4. Remove large pieces remaining that did not melt.

  5. Slowly pour the fat through a stainless steel strainer into glass jars.

  6. Let cool and secure the lid.

Notes

  • Quality matters with animal fat. Opt for the highest quality, most naturally raised animal fat. See my Masterclass for help sourcing.

  • Suet is the fat around the kidney of a cow. Leaf lard is the fat around a kidney of a pig. This fat is higher is stearic acid and very beneficial. It also smells less meaty and is best for skincare products,

  • Save leftover large removed pieces after the three hours to brown and crisp up on a skillet. These are called cracklings.
